Coffee >

> measure out 18grams of coffee beans, pour into hopper, then grind until empty
> adjust grind to middle to start (15)
> put shot glass on scale and pour espresso until you get 36grams, the time on machine will be the exact time to set your machine to pour (usually 30-35sec)
> adjust grind to get the best pour time
> light roast – grind finer for higher yield to get proper shot/dose; maybe raise shot temp
> dark roast – easier to extract requiring coarse grind and less water; maybe lower shot temp


No-bake breakfast bars >

1 1/4c quaker oats
1c pean butter
1/2c dried cranberries, choc chips, or other
1/3c maple syrup
mix and put on parchment paper in square dish
pat down firmly and put in fridge to firm up
ready to eat!


Cinnamon Yogurt Cake > 2258cal
1/2c salted butter, softened – 810cal
1/4c honey (or granulated sugar) – 160cal (194cal)
1c plain Greek yogurt – 179cal
1tsp vanilla – 12cal
2 large eggs – 156cal
1-1/2c whole wheat flour (or all-purpose flour) – 612cal (682cal)
1/2c almond flour (or all-purpose flour) – 324cal (227cal)
2tsp baking powder – 5cal

Cinnamon topping > 837cal
1/2c dark brown sugar – 415cal
2tsp cinnamon – 12cal
1tsp espresso powder – 5cal
1/4c salted butter, melted – 405cal

Preheat oven to 350 and grease 9-inch round or square baking pan. In a large bowl cream together butter and honey until light and fluffy. Add Greek yogurt, vanilla extract, eggs, and mix until smooth. Separately mix flour and baking powder, slowly add to flour mix without over mixing. In small bowl, mix cinnamon topping ingredients except butter, then add butter until it forms crumbly texture. Add to pan in layers. Bake for 35min

(8 total slices = 386cal per slice)


Orange bread >

1 large orange or several mandarins blended in blender, with peel
3 eggs
1c sugar
2c flour
1/3c Olive oil
1tsp baking powder
1/2c water
350 degrees for 40min
Icing > mix 1 cup powdered sugar and 1tbsp OJ


Banana Bread >

3 bananas
1/2c butter
1/3 regular sugar, 2/3 brown sugar
2c flour
2 eggs
1tbsp vanilla extract
1/2tsp salt
1/2tsp baking soda
1/2tsp baking powder
1/4c Buttermilk (substitute = 1/4c milk and 3/4tsp white vinegar)
sprinkle brown sugar on top
60min at 350 degrees
OR a simpler version is 3/4tbsp vanilla, 1/4tsp salt, 3/4tsp baking soda, no baking powder, and no buttermilk

(Instructions)

Bake time is 3hrs
*First number is from bread machine instructions
11.5oz* > 1 cup warm water (110 degrees F/45 degrees C) = 8oz/cup > use 8.4oz
3tbsp* > 2 tablespoons white sugar
1tsp* > 1 (.25 ounce) package bread machine yeast
3tbsp oil* > ¼ cup vegetable oil
3.5c flour* > 3 cups bread flour > use 2.5c bread flour and 0.5c regular flour
1.5tsp salt* > 1 teaspoon salt
> Place water, sugar, and yeast in the pan of the bread machine. Let yeast dissolve and foam for 10 minutes. Add oil, flour, and salt to the yeast. Select Basic or White Bread setting, and press Start.
> Remove loaf from the machine after the cycle is done; cool in the pan for 5 minutes before turning it out onto a rack to cool completely.
> To avoid cube shape from bread machine, mix the dough in the bread machine, but finish in bread pan in the oven 350° for ~30 minutes – once mixed, let it rise in the bread machine or let it rise in a low temp oven

Tortillas >
2c flour
3c warm water
1/2tsp salt
1/2tsp sugar
2tbsp oil
Cook in pan with a little oil just below the highest temp
